Happy Pi (∏) Day!

Did you know it was Pi Day?

Do you know why it is Pi Day?

Because today is March 14th = 3.14 = ∏

I really love math.

I actually wish that I had a job that involved math.

But then I remember that would require me going back to school, so the job I have is just fine.

But baking is kinda mathy.  Sometimes.

But not TOO mathy! I need to remember that I’m trying to get people to feel less intimidated by baking, not more intimidated…

Aaaaanyway. Look at these little cuties!

Mini Apple Pie Sandwich Cookies!

Itty bitty pie crust cookies filled with homemade apple pie filling.  The perfect one bite dessert!

I thought about making a pie to honor this awesome math day.  But I do have to admit, pies are not my forte.  They require a sort of finesse that I just haven’t found yet.  My sister, on the other hand, is a pie goddess.  I’ll leave them to her for now.  And I’ll stick to the cookies.  Pie inspired cookies!

Baker Bettie’s Apple Pie Filling

  • 1 lb baking apples, such as Granny Smith
  • 1 1/2 cups water
  • 1/4 cup cornstarch
  • 3/4 cup sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 tbsp lemon juice
Peel and finely chop the apples.  Combine the water, cornstarch, sugar, cinnamon, salt, and lemon juice in a medium sauce pan and bring to a boil over medium heat.  Cook for about 3 minutes until very thick and reduced slightly.  Add apples and turn down to a simmer.  Cook until apples are tender, about 8-10 minutes.  Allow to cool while preparing the crust.

Pie Crust from Grandma Chris

  • 4 cups all-purpose flour
  • 1 cup shortening
  • pinch of salt
  • ice water
  • milk or cream to brush on crust

Preheat oven to 375 degrees Cut flour, salt, and shortening together with a pastry cutter or a fork.  When the consistency is like coarse meal (pea sized balls), add ice-water 1 tbsp at a time, stirring gently until the dough is able to form a ball.  Gently roll out on a floured surface.  Stamp out circles using a 1 1/2 inch or 2 inch cookie cutter (or top of a glass).  Cut slits in half of the circles for the top crust.  Brush crusts with milk or cream.  Bake at 375 for 8-12 minutes, until lightly browned.  Allow to cool completely before assembling with pie filling.

Funny I was JUST thinking about an apple pie cookie, different from these tho. These look brilliant! I’m definitely gonna go eat some pi(e) today. Maybe a cookie as well :0)

What grade is that? I was trying to remember what grade I started learning about pi. Next time you have homework mania you will just have to add some cookies into the equation (pun intended). Cookies makes everything feel fun!

I guess that depends on which country you are in. However, currently in a British curriculum school in Hong Kong they start covering this concept in 7th grade but then it is reviewed all the way through high school. We really needed some of these cookies this week to help us get through the homework mania.

I’m so sorry BB…and I know I don’t really need to apologise…but I do (and maybe that’s where the apology becomes appropriate because I’m gushing…)just love your recipes, your commentary, your snaps….your….just everything!

PS…Made your pecan/cinnamon rolls….bought the “Artisan Bread in Five Minutes a Day” by Hertzberg/Francois…..and have become a bread baking fool. I don’t eat bread….that’s where the “fool” part come in………………RR

CORRECTION CORRECTION: NOT pecan/cinnamon rolls….but….Cardamon Pecan Swirl Bread….cheated, however, and made them into rolls thinking they were NOT bread….less guilt as I ate more than my share!!

They would be perfect as rolls! I was thinking that when I made them. Glad you liked them. That bread book is really a game changer isn’t it? I never used to make bread, and now that I know it is so easy I make several loafs a week. It is a problem.

And no need to apologize. I love that you call me BB. I’ve never had a nickname and I kinda like BB. Maybe I should start introducing myself that way! Ha.

What constitutes as baking apples? I thought all apples were bake-able – not that I’ve ever tried. I’ve caramelized apples, but I’ve never paid attention to what apples they were :P

Any apple that is very firm, like granny smith, honey crisp, jonathon, ect. Not all apples are good to cook with. Some apples like mcintosh or red delicious, get too mushy when cooked.

These look yummy! I am thinking I will make these using pears instead of apples. I have a friend with a couple pear trees in their yard. I get a bunch of them every year. Oh, or maybe with some of the peaches from my peach tree I hope to have this year! :-)

I have saved this very tasty and unique recipe. Definitely the most creative one I have seen for PI day. Pies really do not serve well to a lot of people, so I find these to be perfect for pot lucks! Buzz Buzz!
