Salted Caramel Pecan Diamonds

Baker Bettie Bars, Christmas, Cookies, Fall, Holidays, Sweets, Thanksgiving 9 Comments

My take on a pecan diamond is a salted caramel pecan shortbread! These cookies would work very well for holiday sharing as it makes a large amount of diamonds and they are incredibly delicious and hard to stop eating! The buttery flavor and crumbly texture of the cookie base contrasts so well with the salted caramel and toasted pecan topping!  A few years ago at Christmas my sister’s mother-in-law gave my family a tin of Pecan Diamonds. Essentially they are shortbread on the bottom and a layer of caramel and pecans on top. That little tin sat out in the …

I don’t know about you, but sometimes I just want something a little more fancy to go along with the traditional Thanksgiving Day feast. Something to munch on while the rest of the meal is being finished and guests are still arriving. I plan for something festive and beautiful to set the tone of the day. I have made a brie en croute with a cranberry filling the last few years, but this year I wanted to try something just a little different- a take on brie en croute with a more fun and cheerful feel to it. What I love so …

Chocolate French Silk Pie

Baker Bettie Fall, Holidays, Pie, Sweets 78 Comments

Rich and decadent chocolate french silk pie recipe. This pie filling requires no baking and is a rich silky chocolate filling with whipped cream topping and chocolate shavings.  I fully admit that I have avoidance issues when it comes to pie. I rarely make them. And it has nothing to do with disliking pie. Pie is probably one of my favorite desserts. But I don’t particularly like making them. I have realized that the only reason I don’t like making them is because I’m not confident in my crust technique. Why is it so hard to make the edges look …

Puff pastry donuts with cinnamon sugar bourbon glaze are made from frying pieces of puff pastry. The inside turns out flakey and airy and they are just so incredibly easy to make! Yesterday Baker Bettie turned two. I can’t believe I have already been at this for two years. We sure have come a long way since that first post. At times it has been stressful, and exciting, and overwhelming. But it has always been amazing. And I have never once wanted to stop. That is a big deal for me. I am an ideas person but I rarely follow …

Baked sweet potatoes with streusel topping are a fun way to serve individual sweet potato crisps! Just bake and serve right in the sweet potato skin!  The other morning I ate a sweet potato for breakfast. And not just a sweet potato. But a sweet potato topped with oats, brown sugar, a bit of butter, and pecans. It was totally warming and comforting and the perfect Autumn breakfast. I patted myself on the back for the great idea. I’m really into sweet potatoes. I have a difficult time understanding why people don’t like them. They can be savory or sweet. …

A simple recipe for making homemade bread bowls! Perfect for holding a bowl of soup or for filling with dip for a party! These bowls are a bit crusty on the outside and soft on the inside.  My husband and I were lounging around last night watching KU basketball and this conversation ensued: Me: Why are you bored?
