Bacon and Egg Pizza with strips of basilWriting has never been my forte. Math, science, things with very clear cut rules and answers, have always felt much more comfortable to me. I always struggled with writing papers in school and was never interested in writing in my spare time until recently. You can’t very well have a blog and hate writing. So I’ve been working on it. It still isn’t easy, but it has become much more enjoyable.

A slice of Bacon and Egg Pizza with strips of basilOne thing that has greatly improved my writing ability has been me making a conscious effort to be more aware and observant of the world around me. A writing topic can come from anywhere. Like my walk to the grocery store this morning. I left my headphones off so I could be more aware and not so lost in my podcast. And what I witnessed is that pretty much everyone I walked by was lost in their own world. It was nearly impossible to get eye contact from anyone I passed and if I did manage to catch someone they quickly looked away obviously uncomfortable. It’s crazy how lonely a big city can feel. There are people all around me all the time but it feels impossible to connect with anyone, even in the smallest of ways. And I fully admit that I easily follow suit. So I’m working on it. I’m working on not letting myself be consumed in my own world and ignoring the world around me. I am working on letting the writing come to me by staying connected and being observant.

Bacon and Egg Pizza with strips of basilBut staying connected about pizza doesn’t take much effort. Pizza is something most of the world can connect over. I mean, it’s pizza. What more is there to say? Except that this pizza has bacon and eggs on it. So I guess there’s that. Melty fresh mozzarella, crispy salty bacon, rich runny egg yolk, and fresh basil. Simply perfect.

Note: I love super crispy browned pizza crust (in case you couldn’t tell). If you like your crust less done, reduce the pre-baking time by a few minutes.

Bacon and Egg Pizza

Ingredients

  • Your favorite pizza dough
  • olive oil
  • Your favorite pizza sauce
  • bacon, crisped and broken into chunks
  • fresh mozzarella cheese, thinly sliced
  • eggs
  • fresh basil, chopped

Instructions

  1. Preheat oven with a pizza stone in it to 450ºF
  2. Roll out the pizza dough very thin and poke holes all over with a fork.
  3. Drizzle with olive oil and transfer to the preheated pizza stone.
  4. Bake the crust for about 5-7 minutes until lightly browned
  5. Remove the crust from the oven, cover with a thin layer of pizza sauce, and top with mozzarella and bacon.
  6. Crack eggs over top of the pizza and bake for another 8-10 minutes until the eggs are set and the crust is a deep brown.
  7. Remove from the oven and top with fresh basil.
