Meatloaf (lightened up) w/Bell Pepper Relish and Garlic & Herb Cauliflower Puree

Meatloaf with Bell Pepper Relish and Garlic & Herb Cauliflower Mashed "Potatoes"

To help you keep up with that New Years resolution of healthy eating here is a meal packed with the feeling of comfort, but not packed with calories.  This meatloaf is amazingly moist and flavorful.  Served with a cauliflower puree that will make you wonder why you ever wasted calories on those spuds.

Turkey Meatloaf w/Bell Pepper Relish

Ingredients

For the Relish

  • Extra-virgin olive oil
  • 1 large yellow onion, finely diced
  • 4 garlic cloves, minced
  • 2 bell peppers (either red, yellow, or orange) finely diced
  • 12 oz ketchup
  • 2 Tbsp Worcestershire sauce
  • salt and pepper

For the Meatloaf

  • 3 slices wheat bread, crusts removed, torn into chunks
  • ¼ cup skim milk
  • 2½ lbs lean ground turkey
  • ½ cup egg substitute
  • 1 tsp fresh thyme, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • salt and pepper

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Coat a skillet with olive oil and place over medium heat.
  3. Saute the onion and garlic for a few minutes. Add the bell peppers and cook them for a couple of minutes to soften.
  4. Stir in the ketchup and worcestershire, and season with salt and pepper.
  5. Simmer the relish for 5 minutes to pull all the flavors together. Remove from the heat.
  6. Place the bread in a large bowl and add the milk to moisten.
  7. Add the ground turkey, 1½ cups of the bell pepper relish, egg substitute, thyme, and rosemary; season with salt and pepper. Using a your hands, combine all of the ingredients just until well mixed. Do not over mix.
  8. Lightly oil a loaf pan. Transfer the meat mixture to the pan and pat down to evenly distribute.
  9. Cook for 30 minutes in a 375 oven.
  10. At this point, skim off any fat that has risen to the top.
  11. Coat the top of the meatloaf with another ½ cup of the relish.
  12. Bake for another hour.
  13. Remove the meatloaf from the oven and let it cool a bit before slicing.
  14. Serve with the remaining bell pepper relish on the side.

Garlic & Herb Cauliflower Puree

Ingredients

  • 1 large head of cauliflower
  • 4 garlic cloves
  • 4 Tbsp light margarine
  • ½ cup light sour cream
  • 1 tsp fresh thyme, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • salt and pepper

Instructions

  1. In a large pot of boiling salted water, cook the cauliflower until tender. Strain.
  2. In a large sauce pot, melt the margarine and add the garlic, cook for a minute or two.
  3. Add the sour cream, thyme, and rosemary.
  4. After the sour cream is melted, add the cauliflower to the mixture.
  5. Use an immersion blender to puree the cauliflower.
  6. Salt and pepper to taste.
