HOW DO YOU PREVENT PIE CRUST FROM BECOMING SOGGY?

Typically pie crust becomes soggy when it is under-baked. To prevent pie crust from becoming soggy, position a rack on the lowest position in your oven. Place a baking stone or sheet pan in the oven while the oven preheats. Bake the pie on the preheated baking stone or sheet pan in the lowest position in the oven.

You may also need to extend the baking time of the pie to ensure the crust is truly baked through. Fruit pies particularly can stand up to a very long baking time. If the filling is an extremely wet one, egg white can be brushed on the crust before blind baking to create a barrier between the crust and the filling.
