Key Limes get their name from the Florida Keys where they grow abundantly. They are much smaller and have more seeds than regular limes. They also have a higher acidity and are prized for their juice for use in Key Lime Pie due to a more concentrated lime flavor. The flavor the key limes is also a bit different than other limes. It tends to be more bitter and tart. The rind on a key lime also tends to be much more thick than the thin skin of persian limes (or regular limes).

Key Limes are in season in Florida from June- Sept however they can be difficult to find in some places even in season. Bottled key lime juice can often be found year round and is a good substitute if the product is 100% juice.
