OVERVIEW
- Skill Level: Beginner
My mother has made this wassail recipe my whole life for every holiday gathering. She would always put it in a slow cooker early in the day and it makes the house smell incredible when the guests arrive.
The recipe is so quick and easy to put together. It just requires apple cider and pineapple juice mixed with a bit of honey, orange slices, and some spices. This is the perfect holiday drink and adults and kids alike will love it!
We also like to add a bit of bourbon into the adult servings which makes it extra tasty!

My Mom's Wassail Recipe
My mother has made this wassail for every holiday party I can remember. We put it in the crockpot early in the day and it makes the house smell incredible. Serve as is, or add a bit of bourbon if you like!
Ingredients
- ½ gallon (2.2 liters) apple cider
- 3 cups (720 milliliters) pineapple juice
- 2 oranges, sliced into rounds
- 114 grams (⅓ cup) honey
- 4 whole cinnamon sticks
- 1 tablespoon whole cloves
- 1 tablespoon whole allspice
- bourbon for serving, optional (plan on 1.5 ounces per drink)
Instructions
- In a large pot (I typically use a slow cooker) combine the apple cider (½ gallon), pineapple juice (3 cups), orange slices (2 oranges sliced into rounds), honey (114 grams), cinnamon sticks (4 whole), whole cloves (1 tablespoon), and whole allspice (1 tablespoon).
- Let simmer for about 2 hours or (if using a slow cooker) turn on high for 2 hours. Turn the heat down to low and serve when ready. I typically let it sit in the slow cooker all day/evening during a holiday party.
- Optional: When ready to serve, add about 1 shot (1.5 ounces) of bourbon into each serving glass. Top with wassail. My family always keeps the bourbon separate from the wassail so the kids can enjoy some too.

We made this for Thanksgiving yesterday and it was so good! I will definitely do it again!
Cranberry juice works great if apple allergies are a problem! 🙂
Think I dropped a small piece of nutmeg in the cooker too. The little bits leftover after grating that just rattle in the can cause you don’t want to scrape off your fingers getting the last bit, lol.
Although in theory these bits could also be added to some rum, bourbon, or vodka to make extract! Ooo!
I just recently started making some of my own extracts, it’s so fun, and addictive!
Thanks for sharing!
